Professor AlKaabi's research interests include regulatory science, health innovation policy, and the integration of advanced therapeutics with regenerative medicine, precision genomics, and AI-enabled clinical care.

In addition to her position at MBZUAI, Professor AlKaabi is a Director General of Emirates Drug Establishment (EDE), Executive Director of AD-BMT program at Abu Dhabi Stem Cell Center (ADSCC), Vice Chairman of National Multiple Sclerosis Society (NMSS), Chairperson of UAE biotechnology Research Center (UAEBRC) as well as a Consultant hematologist at Yas Clinic Hospital in Abu Dhabi.
